A Dozen Muffins
- 1½ cups of flour
- ½ cup of quick oats
- ¼ cup of ground flax seed
- 2 tsp of baking soda
- 1½ cups of cocoa powder
- 2 eggs
- ½ cup of unsweetened apple sauce
- 1½ cups of white sugar (or Splenda)
- ½ cup of canola oil
- ½ cup of greek yogurt or sour cream
- ½ tsp of cinnamon
- 1 tsp of vanilla
- 2 cups of grated zucchini with the excess moisture squeezed out
- ¾ cup of chocolate chips
- Preheat oven to 350.
- Line muffin tins with papers or spray with cooking spray (this recipe makes 18-24 muffins)
- Mix the first five dry ingredients together in a medium sized bowl.
- Set aside.
- In a larger bowl whisk together the eggs, apple sauce, sugar and oil.
- Add the yogurt, cinnamon and vanilla and mix well.
- Stir in the zucchini.
- Stir in the dry ingredients and mix until just mixed.
- Gently stir in the chocolate chips.
- Bake for 15-20 minutes or until a toothpick inserted in the middle comes out clean.
- Cool on a wire rack.
