1 9-inch pie

Ingredients:

  • Pie dough for a double crust pie
  • 4 cups saskatoon berries.
  • 2 tablespoons lemon juice
  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 cup butter

For the filling:

  1. Pour berries and lemon juice in a large saucepan over medium heat.
  2. Cook berries and lemon juice for ~5 minutes.
  3. In a small bowl, mix together sugar and cornstarch
  4. Mix sugar and cornstarch in with berries.
  5. Stir constantly until boiling. 
  6. Remove from heat.

To make the pie:

  1. Pre-heat oven to 425F
  2.  Roll out pastry dough. 
  3. Line pie plate with one circle of pastry dough.
  4. Pour berry mixture into pie crust. 
  5. Level out berry mixture
  6. Gently place second pie crust on top of pie
  7. Pinch edges and trim off excess pastry
  8. Brush top with milk/cream if desired and sprinkle with sugar.
  9. Cut vent slits into top of pie.
  10. Bake for 15 minutes, then lower the heat to 350F and bake for another 40-45 minutes or until the crust is golden and the filling is bubbling.
  11. Remove from oven and enjoy!
